Hi, I’m Molly! I am a wife and mother of two. In January of 2016, I decided to go on a long water only fast. I did this for personal reasons, and I don’t recommend that anyone does any type of fast without lots and lots of in-depth research, a talk with your doctor, and medical supervision. I wouldn’t even mention it, but it was during this fast that all of my cravings for sugar, processed foods, and meat completely disappeared (and this is HUGE, since I’ve been a certified sugar-holic my whole life!) and all I wanted, all I craved and felt like I couldn’t live without was V E G E T A B L E S! Ohmygoodness, I loved them! Veggies that I used to not care for were now my best friends, I dreamed of them, I pinned and saved pictures of them! They were beautiful and colorful and gorgeous! They made me feel light and clean inside after I ate them…not sluggish and stuffed and bloated and gross, like I used to feel after eating. I decided that I never wanted to go back to eating the way I did before, which was heavy on processed carbs and sweets.

I began researching nutrition and diet, and came across the book Eat To Live, by Dr. Joel Fuhrman. This book, as well as others I’ve since read, changed the way I looked at food. I used to see it as a reward, as comfort, as a barrier against loneliness and boredom. Now, I realized that food could actually heal your body and prevent disease! God has designed our bodies perfectly, with all of our systems working together to use the nutrients in the right kinds of foods to make and keep us healthy! That’s so cool!!

I now eat a vegan diet, which means I eat no animal products — so, no dairy, no eggs, no meat. I also don’t eat oils. I get healthy fats from the plant itself (avocados, coconut, nuts and seeds). I have also completely cut out processed sugar/sweets. cropped-file-jul-24-7-46-12-am.jpegI eat as much as I want of all kinds of fruits and vegetables, and I never have to count calories or restrict portions (except for fats, I limit those to one serving, one meal a day) in fact, I eat  H U M O N G O U S portions of salad, smoothies, and raw and cooked veggies! Its so great! Along the way, I’ve lost 15 pounds and kept it off!

I love finding new ways to prepare fruits and vegetables. I love experimenting, and sometimes it works and sometimes my compost pile gets to eat it instead! 🙂 I enjoy taking pictures that capture all of the colors, all of the yumminess of whole, ripe fruits and vegetables. I love learning and trying new things! So, how about I’ll be daring and experiment, and then I’ll tell you what I think? That way, we can learn together! 🙂

I don’t claim to be an expert on nutrition and diet, but I’ve done a lot of reading and research of people who are, and I am passionate about sharing what I know. I’m so glad you’ve joined me!

  4. Congratulation on loosing all that weight. I know this problem, but arent vegetables so much fun to eat? you should see the plate of little carrot/cucumber ‘fingers’ right next to my computer! 🙂 Looking forward visiting here very soon again.
